Weekly meals July 20 – July 24

I’m back!!  I know that it has been a while since my last post, but we were road tripping and enjoying some family time.  We’ve been home less than a week, but have been busy celebrating my son’s 10th birthday.  Full birthday meal and cake recap will come later.  We cooked every meal while we were away and as promised I will share my dinner ideas with you:

  • pre-made kebabs (purchased from Save On Foods) served with salad
  • pizza cooked on the grill using naan bread as the base
  • grilled sausages, potatoes, peppers and onions
  • BBQ chicken salad from @skinnytaste
  • Turkey tacos made into taco salad from @culinaryhill
  • Homemade fish and chips (I didn’t make this meal, but provided slaw and roasted potatoes and carrots as side dishes)

Once we got home I couldn’t wait NOT to cook, so last week for our anniversary we ordered sushi to have with the kids.  We ended the week eating home cooked meals since I had some time to do some recipe searching.  We had zucchini turkey burgers from @bigdeliciouslife you can find the recipe right on her Instagram feed, and skillet chicken with rice, zucchini and corn from @bevcooks.  My son requested homemade pizza for his birthday on Sunday, so I bought dough from CO-OP and all of the necessary toppings and we did make your own pizza night.  For his cake I used my go-to chocolate cake recipe with pudding frosting and made it into a bowl of popcorn.  It turned out so well, way better than I had expected.

This week we are eating at home Monday, Wednesday and Thursday, my husband and I are going to friends for dinner Tuesday and Friday my son is having a small group of kids for a drive in movie in the backyard.

  • Easy grilled enchilada chicken from @thismessisours I served the chicken in corn tortillas with a simple pico de gallo and some sour cream, and added some gilled corn on the side.  You can make your own enchilada sauce but I opted to buy some from the store.  This meal is so quick and easy and would be great made into a salad.
  • We are out for dinner but I am taking dessert, I have a box of peaches and decided to make a peach and pecan crisp from @smittenkitchen, her recipes never disappoint.
  • Shrimp bowl with coconut cilantro lime rice and pineapple salsa from @twopeasandpod this is a new bowl recipe that I can’t wait to try!
  • Grilled chicken and peach kebabs from @aimeebourque I will serve these with some roasted potatoes and green beans.

Since I have so many peaches I am going to try to bake a few other things besides the crisp.  A long time ago I made peach cobbler scones from @joythebaker and they were amazing.  I also found a recipe for peach upside-down cake that looks divine!  If I find any other peach recipes I will pass them along.  After a long hiatus the grocery list 133

Weekly meals March 30 – April 3

Meal updates from last week:
Last week’s meals were a hit!  We loved the make your own salad rolls, my son especially enjoyed choosing his ingredients.  The roast chicken was delicious, and it did double duty as I used the leftover meat for the creamy chicken noodle soup.  The soup and white buns were the best recipe of the week, I cannot tell you how good those buns were!  I do admit that it was a long process to make the dough, as it needed to rise three times, but the end result was well worth all of the work.  I accidentally over cooked the salmon so it wasn’t my best meal.  We had takeout Friday night from Joey’s Chinook, they are offering a simplified menu and you are able to pick it up curb side.  On Saturday we had grilled sausages, baked beans and a spinach berry salad.  After dinner we took a family drive to deliver a birthday cake to a very special girl, the day didn’t include the party that she had wanted, but the cake made her day that much better!  I used my go-to chocolate cake recipe from @thelittlekitchen

This week will look similar to last week, we are eating at home Sunday-Thursday and then doing takeout Friday.  Weekends continue to be wide open as we navigate these uncertain times.  I begin working from home this week, so we will see how that goes.  My son will begin to do some school work during his days at home, it will be nice to have some routine.

  • Flank steak with salsa verde from the Whitewater Cooks cookbook, on the side I served baked potatoes, grilled peppers and asparagus and sautéed mushrooms.  The steak was outstanding as was the sauce, it would be great on chicken or fish.
  • Lemon garlic baked chicken drumsticks from @themediterraneandish we will eat this with a Greek salad and some steamed rice or butter noodles for the kids.
  • Spicy pork and kale soup from @eatliverun this recipe comes from my bestie who makes this soup on a regular basis.  I think besides the kale I will add some shredded carrot and possibly snap peas.
  • Turkey and white bean chili from @saltandlavender I couldn’t find any white kidney beans as the store today as the canned bean aisle was empty, but I did find one can of navy beans so they will have to work.  I will top the chili with avocado and some tortilla chips.
  • Chicken fried rice from @amandafrederickson my kids don’t love peas so I will add some snap peas to the rice.

I am not planning on making any bread this week!  I think that I need to do some research and find a slightly less time consuming recipe.  We made some energy balls last week, and my kids gobbled them up!  I am going to make another batch this week, and was also debating making some granola.  I have some dried blueberries and a ton of pecans, and found a recipe that sounds delicious!  Stay safe and healthy, make life easier with grocery list 124

Weekly meals March 23 – March 27

Meal updates from last week:
We made it through our first week of staying home!  I have to admit that it wasn’t easy, and I found some the days long, but we will continue to do our part to prevent the spread.  We tried to get out of the house for a walk every day, it seems to help with everyone’s overall mood and happiness.  We will continue to get out of the house this week as well.  Two of the recipes from last week were very good: sausage and kale soup and the teriyaki turkey bowl.  The broth for the soup was so delicious!  It called for red wine and I usually would just substitute broth, but this time I used a good bottle of wine.  Let me tell you, it changed the flavour of the soup.  It was amazing!  On Friday we used Doordash and ordered some sushi, it was nice not to cook and take a break from the kitchen.

This week, I will be cooking Sunday-Thursday, Friday we will try to get some takeout using Doordash, and we don’t have plans for Saturday.  Tonight we had a simple meal of elk burgers, fries and coleslaw.  I made a simple dressing for the slaw with mayonnaise, buttermilk, apple cider vinegar and a sprinkle of sugar.  I added thinly sliced apple to the cabbage for some sweetness.

  • Make your own salad rolls inspired by crispy tofu salad rolls from @fraicheliving I am using the recipe from Fraiche Food, Full Hearts but the above recipe us very similar.  I will have different fillings available for the kids to choose from: crispy tofu, cucumber, carrots, mango, avocado, peppers and cilantro.  I am hoping that giving them the chance to choose their fillings will get them excited about their meal!
  • Perfect roast chicken from @footnetwork I will serve this with roasted potatoes and steamed beans.
  • Using the leftover chicken from the night before I will make creamy chicken noodle soup from @twopeasandtheirpod on the side we will enjoy perfect white buns from @fraicheliving.  This recipe makes three small loaves, so I will make eight buns, one regular loaf and one cinnamon raisin loaf.  I have never made bread so here’s to hoping that it all turns out!
  • Baked garlic butter salmon from @delish on the side we will have steamed brown rice and a spinach salad.

As we will have time this week, we will try to bake just as we did last week.  I found a recipe for raspberry crumble bars that sounded delicious.  I am also going to make a birthday cake for a special little girl!  As always I will use my go-to chocolate cake with pudding frosting recipe.  I am not sure how I will decorate, but I may try to do ombre pink or purple frosting.  Stay safe while using grocery list 123

July 15 – July 19

Meal updates form last week:
There was a lot of eating out and meals on the fly last week as we had many different plans.  I really liked the spanakopita meatballs, I ended up making them into patties as I didn’t feel like making little meatballs.  I served these over a simple Greek salad with greens and tzatziki.  Other meals last week were simple and easy to prepare as well as many dinners out.  I am happy that this week is a little calmer and there will be more home cooked meals.

We are eating at home this week Sunday-Thursday, I had all intentions of making dinner tonight but we were invited to my parents for cabbage rolls, which is not a meal that I can pass up!  They were amazing as usual.  For the rest of the week we will be eating in and then the weekend is filled with birthday celebrations for my son and father.

The only baking I will be doing this week is a birthday cake for my son.  He has asked for a dog cake!  As usual I will be using my go-to chocolate cake recipe with pudding frosting from @thelittlekitchen.  I will also be making a lemon bundt cake for my dad’s birthday, this recipe was in my gramma’s recipe box and I will post a copy later this week.

Weekly meals June 17 – June 21

Meal updates from last week:
We loved the Thai chicken skewers with peanut dipping sauce, and the addition of grilled pineapple all the flavours were amazing!  We also really enjoyed the watermelon and steamed shrimp salad, as usual the kids ate all of the components minus the lettuce.  Friday night we went to friends for dinner and I took a Greek salad, Saturday we ordered takeout and Sunday we went to my parents to celebrate Father’s Day.  I took a strawberry rhubarb crisp that was really good.  This weekend we also celebrated my son’s birthday, as he is a summer birthday we like to have his party before the end of school.  He decided on a Nerf theme, so they made shields, had a full on battle, ate lunch (chicken fingers, fries and watermelon), battled some more and then had cake (my go-to chocolate cake).  It was a wonderful afternoon and he was so happy.

This week is the last week of baseball, which has been so much fun for our son and us as spectators.  It is also the last full week of school!  I cannot believe that this year is almost over, it has gone by too fast.  We will be eating at home Monday-Thursday there is no plan on Friday and possibly heading to friends on Saturday.

I don’t have a baking plan this week but have a collection of spotted bananas on the counter.  I also have lots of blueberries so we will see what happens with those two ingredients.  Make shopping easier with Grocery List 98

Weekly meals June 10 – June 14

Meal updates from last week:
We enjoyed all meals from last week, but the top two recipes for me were the turkey patties and monte christo sandwiches.  My kids also loved the sandwiches!  I didn’t add the gruyere cheese to theirs as they find it too strong.  We were away in the mountains this weekend, and we had a wonderful time and ate some amazing food.  We went to stay at the Post Hotel in Lake Louise, it is a hidden gem in the rocky mountains.  The added bonus is that they have an outstanding restaurant at the hotel, we got a chance to eat there for dinner last night and then for breakfast this morning.  Once again they didn’t disappoint.  I had their summer salad with avocado, tomatoes, peppers, feta and a passionfruit vinaigrette.  For my main course I ordered poached lobster, which was served over a mixture of homemade pasta noodles and zoodles.  For dessert they did a take on a magnum bar with some khalua whipped cream and salted caramel popcorn.  It was amazing!  If you are ever looking for a place to stay while visiting Lake Louise, the Post Hotel is not to be missed!

This week has lots going on.  My son has baseball twice, we are also celebrating his friend birthday.  We do this so that all of his school friends have a chance to attend, if we waited till summer then no one would be around.  He has chosen to have a Nerf birthday this year, so we will transform our yard into a Nerf battle zone where they can shoot till their hearts content.  He has asked for chicken fingers and fries and a toothless dragon cake for dessert.  As always I will use my go-to chocolate cake recipe with accompanying icing.  I will post pictures of the completed cake on the weekend.  Also somewhere in there we need to celebrate Father’s Day!  It’s going to be busy.

  • Soy marinated flank steak from @skinnytaste we ate this tonight with a spinach and mixed berry salad.  I topped the salad with toasted almonds, feta cheese and a balsamic vinaigrette.  The kids ate raw fruit and veggies as well as a cheese bun with butter.
  • Pineapple Thai grilled chicken skewers from @foodfaithfit we will eat these with some steamed edamame and rice.
  • Egg roll bowls from @skinnytaste
  • Steamed shrimp and watermelon salad from @cookinglight I will serve the kids some pasta alongside their shrimp.
  • Tonight I am going to grill sausages with peppers and onions.  I will serve these in a sub roll with some veggies or salad on the side.

Besides baking a birthday cake this week I won’t have any other time to bake.  I do have some rhubarb that I am dying to use, but not really sure what I am going to do with it.  I was leaning towards a strawberry rhubarb crumble.  Head to the store with Grocery List 97

Weekly meals Oct. 8 – Oct. 12

Meal updates from last week:
The meatloaf sheet pan dinner was delicious and so simple to make.  I loved the Thai ramen, my kids weren’t as impressed with them.  I think that it was because they were really saucy and sometimes my kids are put off by too much sauce.  They did really like the sweet fire chicken, but I didn’t put sauce on their chicken I kept it plain.  Last night we celebrated Thanksgiving with our family, everyone brought something and it was all amazing.  My mom hosted and cooked the turkey, stuffing and made the gravy.  My sister-in-law made the mashed potatoes, I made turnips and birthday cake, my aunt made maple soy glazed brussels sprouts and butternut squash and my grandma made the Pumpkin Pie.

This week we will be eating at home Monday-Friday, my son started playing basketball and his games are all on Friday night, meaning that we will need to eat at home or grab a quick dinner out.

  • BLT salad with buttermilk dressing from @marthastewart I have shared this recipe many times before and it never disappoints.
  • Pork fried rice from @rachaelrayshow I have made this recipe before and it was a hit!  My daughter is off meat unless it is ground, so this paired with her other favourite food rice will be a winner for sure!
  • Sloppy joe tacos from @gimmesomeoven my son has been asking for tacos and this recipe goes a little bit beyond the traditional taco.  I like to eat mine over a bed of shredded lettuce topped with some broken tortilla chips.
  • Grilled chicken kale salad with peanut vinaigrette from @skinnytaste this is a new salad for us, but as you know I love a dinner salad.
  • Grilled chicken sausage with roasted potatoes and cauliflower.  I will serve this with some grainy and Dijon mustards.  My kids will dip their sausage and potatoes in ketchup.

Last week I had another chance to use pumpkin in some baking, I made a batch of pumpkin chocolate chip cookies.  I left half on the counter, which were eaten in days, and I froze the rest to gift to my son’s teacher.  They were soft and chewy with a hint of spice, I didn’t add the walnuts instead added a new more chocolate chips!  Dinner List 70 will help with this week’s shopping.

Weekly meals July 30 – August 3

Meal updates from last week:
The best meals from the past week were the Korean chicken rice bowls, mango chicken stir fry and the grilled shrimp tacos.  For the rice bowls I added some sautéed cabbage and green beans, it just added more substance to the bowls.  My kids loved the chicken stir fry!  They ate their entire plates, which as of late has not been the norm.  I ate the leftovers for lunch the next day and they tasted even better.  The shrimp tacos came together very easily and the flavours were delicious.

This week we are hosting friends for a BBQ on Sunday night and eating at home Monday-Friday.  I am also hosting girlfriends on Thursday to celebrate a new baby.  Friday is my daughter’s second birthday, we will be celebrating with cake at home surrounded by family.

The Dinner List 63 is very long this week!

Weekly meals July 16 – July 20

Meal updates from last week:
Our favourites from last week were the Thai chicken with nectarine salad as well as the flattened chicken with Mexican-style street corn.  If you haven’t ever tried to make Mexican corn you are missing out!  It is delicious.  I didn’t have a chance to make the fajita foil packs as last week was very busy.

This week is another full week, friends are coming to stay with us for a couple of nights and then it is my son’s birthday on Thursday.  We will be eating at home Sunday-Wednesday we may be out for birthday dinner Thursday and then eat at home Friday.  We ended last week eating at home Friday and then going out with friends Saturday.

  • Orzo salad with grilled shrimp from @amandafrederickson we ate this last week and it was amazing!  Such a perfect summer meal that takes advantage of seasonal veggies.  This fantastic blogger does an Insta-story every week on fridge foraging, usually a very simple weeknight meal.  Check her out!
  • Honey mustard chicken, bacon and avocado salad from @buzzfeed I have made this salad before, and just like the last time it was a hit.  The chicken marinade is also the dressing for the salad.  Brilliant!
  • Blackened grilled salmon salad with pineapple salsa from http://www.joyfulhealthyeats.com everyone knows that I love a dinner salad.  My kids have been loving salmon, and who isn’t happy to grill their entire dinner.
  • Tonight we are hosting a group of friends and their kids.  I will be grilling hotdogs and sausages and then making a snack board for the kids to nibble off of.  If you are looking for snack platter inspiration then head to @weelicious to see how she creates the best and most visually appealing boards.
  • I will make pizza on the grill with a simple green salad.  Depending on how I’m feeling I will make my own dough or use a store-bought variety.  I don’t usually use pizza sauce, instead I use our favourite jarred pasta sauce.
  • Tonight is my son’s 8th birthday, he will get to choose his favourite homemade meal or we will go out.  We will be having a chocolate icebox cake in the shape of an eight to celebrate his big day.  The recipe and cake decorating is from @aimeebourque I am very excited to decorate and photograph this cake!

I had a chance to make this chocolate chip banana bread from @somethingswanky we haven’t had a chance to taste it but I will let you know what we think.  Take the Dinner List 61 to help you with your shopping.
