Weekly meals August 2 – August 6

Meal updates from last week:
The two other recipes that I made from last week were great!  Loved the salad board and the peach and sausage supper.  I added garden potatoes to the sausage and peach meal, I also cooked it in a cast iron skillet on the BBQ, and it turned out so well.  Both meals are good during these hot summer days as everything is cooked on the grill.  We were out of town for a few nights, and ate some really delicious meals.  Thursday we ate smoked chicken cooked on a Traeger grill (I have secretly wanted one for years), roasted garden potatoes and beets and a spinach peach salad.  Friday we had BBQ pizza using a dough recipe from @marthastewart and topped them with a variety of toppings, I also made the same spinach peach salad from the night before.

This week we will be eating at home Sunday-Thursday, there are no plans for the weekend so we will just wait and see.  Tomorrow our daughter is turning 4!  I have made the different layers of her cake, but will spend some time tomorrow afternoon icing and assembling.  Stay tuned for cake pictures!

  • Homemade burgers with tots and corn on the cob.  I went to Costco on the weekend (insert shocked face), which is rare for me as I NEVER go.  I ended up buying the three pack os Kirkland organic ground beef, which is what we used for our burgers.  The meat was amazing, and so affordable for organic, $24 for a pack of three!
  • Asian peanut noodles with chicken from @skinnytaste I have made this recipe before and my kids gobbled it up, so I will be serving this for my daughter’s birthday dinner.
  • Vegetarian avocado sushi bowls from @whatsgabycooking I won’t be adding the cabbage to this bowl but will add all of the other veggies.
  • Greek chicken tacos from @bevcooks I’ve made a couple of her recipes lately and I am excited to try this one.
  •  I have some Italian sausages in the freezer as well as some Farmer’s sausage, so I will grill those with some peppers and onions and make a simple salad.

I don’t have any baking plans this week as it has and continues to be so HOT.  If the weather cools slightly I will make a batch of blueberry muffins, I made a blueberry buttermilk breakfast cake last week and it was devoured by the kids!  Next time I’m at the store I will get a carton of buttermilk so that I can make it again.  Shop with ease using grocery list 134

Stay healthy,

Weekly meals July 27 – July 31

Meal updates from last week:
Our favourite meals from last week were the shrimp bowl, and  the chicken and peach skewers.  I haven’t had a lot of luck making coconut rice, I find that it never tastes that coconuty, this was the same for this recipe.  I LOVED the grilled peaches with the chicken they turned out so well.  We also really liked the peach pecan crumble, my son finished off the entire pan.  I ended up making a simple charcuterie on Friday night, all ingredients were bought from the @italianctryyc and it was amazing!  We had peaches, prosciutto, basil, focaccia, olives, tomatoes and burrata.  Flavours were outstanding!  Saturday night we went out for dinner to a local spot that has just reopened called The Goose, food was so good, and you can sit on their patio social distance style.  If you live in the SW then check it out.

This week we will be eating at home Monday to Wednesday, we are going out of town for a few nights and will be back at the beginning of the weekend.  Next week is our daughter’s birthday and she has requested a Paw Patrol cake (insert scared face here!).  I am going to bake the pieces of the cake tomorrow so that it is done, and then will freeze it.  I find that icing a mostly frozen cake is much easier as you don’t get so many crumbs.  As always I will be using our favourite chocolate cake recipe with pudding frosting.

  • Baja grain bowls from @howsweeteats I made these tonight and they were amazing!  There isn’t any protein with this recipe so I bought some frozen tempura shrimp, baked them off and served them on top of the rice.  They were a great accompaniment to the bowl.  I really liked the dressing and would make it to serve on a salad.
  • Grilled chicken, vegetable and avocado salad board from @weelicious this is a new recipe from Catherine that sounds amazing!  I’m not going to be using eggplant as it is not a favourite in our house, instead I bought a yellow and green zucchini.
  • Roasted sausage tomato and peach supper from @thedaleyplate since it is peach season I need to take advantage!  I went to the Farmer’s Market on the weekend and stocked up on peaches, so I am ready to cook and bake with them.

I am not sure what the cooking plan is while we are away, but here are a few other recipes that I have on my must-try list:
Grilled salmon with citrus salsa
Coconut lime chicken
Zucchini ribbon pizza with chicken
Buttermilk blueberry breakfast cake

The grocery list will return next week.

Stay healthy,

Weekly meals July 20 – July 24

I’m back!!  I know that it has been a while since my last post, but we were road tripping and enjoying some family time.  We’ve been home less than a week, but have been busy celebrating my son’s 10th birthday.  Full birthday meal and cake recap will come later.  We cooked every meal while we were away and as promised I will share my dinner ideas with you:

  • pre-made kebabs (purchased from Save On Foods) served with salad
  • pizza cooked on the grill using naan bread as the base
  • grilled sausages, potatoes, peppers and onions
  • BBQ chicken salad from @skinnytaste
  • Turkey tacos made into taco salad from @culinaryhill
  • Homemade fish and chips (I didn’t make this meal, but provided slaw and roasted potatoes and carrots as side dishes)

Once we got home I couldn’t wait NOT to cook, so last week for our anniversary we ordered sushi to have with the kids.  We ended the week eating home cooked meals since I had some time to do some recipe searching.  We had zucchini turkey burgers from @bigdeliciouslife you can find the recipe right on her Instagram feed, and skillet chicken with rice, zucchini and corn from @bevcooks.  My son requested homemade pizza for his birthday on Sunday, so I bought dough from CO-OP and all of the necessary toppings and we did make your own pizza night.  For his cake I used my go-to chocolate cake recipe with pudding frosting and made it into a bowl of popcorn.  It turned out so well, way better than I had expected.

This week we are eating at home Monday, Wednesday and Thursday, my husband and I are going to friends for dinner Tuesday and Friday my son is having a small group of kids for a drive in movie in the backyard.

  • Easy grilled enchilada chicken from @thismessisours I served the chicken in corn tortillas with a simple pico de gallo and some sour cream, and added some gilled corn on the side.  You can make your own enchilada sauce but I opted to buy some from the store.  This meal is so quick and easy and would be great made into a salad.
  • We are out for dinner but I am taking dessert, I have a box of peaches and decided to make a peach and pecan crisp from @smittenkitchen, her recipes never disappoint.
  • Shrimp bowl with coconut cilantro lime rice and pineapple salsa from @twopeasandpod this is a new bowl recipe that I can’t wait to try!
  • Grilled chicken and peach kebabs from @aimeebourque I will serve these with some roasted potatoes and green beans.

Since I have so many peaches I am going to try to bake a few other things besides the crisp.  A long time ago I made peach cobbler scones from @joythebaker and they were amazing.  I also found a recipe for peach upside-down cake that looks divine!  If I find any other peach recipes I will pass them along.  After a long hiatus the grocery list 133
is back!

Stay safe,

Weekly meals May 18 – May 22

Meal updates form last week:
My husband and I loved the mushroom bowls with kale pesto, and as I noted on my Instagram my kids didn’t eat them!  I didn’t get a chance to make the BBQ chicken thighs as we had beef burritos instead.  The salmon was also delicious, I used regular pasta instead of soba noodles.  I did make a large batch of hummus using my newest kitchen appliance.  It turned out really well, a great way to get my daughter some much needed protein.  She isn’t really a meat eater, so I try to get her to eat hummus, edamame, nuts and beans as much as possible.  Every once and a while she will surprise us and take back some chicken or beef, but that is a rarity.

This weekend we did sushi takeout from Globefish, Asian pork tenderloin and takeout tacos from Native Tongues.  I will share our Monday meal below.  This week we will be eating at home Monday-Friday, we usually do takeout Friday nights, but I found a recipe that I might try instead of doing takeout.  Saturday we will do takeout for sure.

  • Greek marinaded chicken thighs from @playswellwithbutter we ate the grilled chicken with a Greek salad, grilled pitas and hummus.
  • Grilled Spolumbos mild Italian sausages with corn, tater tots and raw veggies.
  • BLT salad with buttermilk dressing from @marthastewart this is a salad that I make a lot.  My kids like to eat all of the ingredients except for the lettuce.  I usually make them a quesadilla to supplement their meal.
  • Pad Thai, I haven’t decided which recipe I am going to use.  They are both pretty similar, so it will either be this one or this one.  I am going to use prawns as my protein.
  • Mediterranean Linguine from the Earl’s cookbook, I have had this book for a while, but I haven’t cooked anything out of it.  As per a recommendation from a friend I am going to try this recipe.

I made a small dessert tonight, it was another recipe from @dessertfortwo.  I really love her recipes, and what I love even more is that they are small batch recipes, so there isn’t a ton leftover.  I have a lot of spotted bananas, so what better way to use them, then in a banana sheet cake with cream cheese frosting.  It was amazing, the only thing that I would change would be to decrease the amount of sugar.  The recipe calls for 1 cup of white sugar, next time I will try with 3/4 cup.  If you haven’t ever gone to her website then you need to go now, so many great small batch recipes.  I still have three more bananas that need to be used, so I think that I will try to make good morning protein cookies from @weelicious.  I am sure that I can convince my kids to eat cookies for breakfast!  I don’t have any other plans to bake this week, but that has never stopped me before.  There isn’t a grocery list this week, it will be back next week.

Stay healthy and stay safe,

Weekly meals March 30 – April 3

Meal updates from last week:
Last week’s meals were a hit!  We loved the make your own salad rolls, my son especially enjoyed choosing his ingredients.  The roast chicken was delicious, and it did double duty as I used the leftover meat for the creamy chicken noodle soup.  The soup and white buns were the best recipe of the week, I cannot tell you how good those buns were!  I do admit that it was a long process to make the dough, as it needed to rise three times, but the end result was well worth all of the work.  I accidentally over cooked the salmon so it wasn’t my best meal.  We had takeout Friday night from Joey’s Chinook, they are offering a simplified menu and you are able to pick it up curb side.  On Saturday we had grilled sausages, baked beans and a spinach berry salad.  After dinner we took a family drive to deliver a birthday cake to a very special girl, the day didn’t include the party that she had wanted, but the cake made her day that much better!  I used my go-to chocolate cake recipe from @thelittlekitchen

This week will look similar to last week, we are eating at home Sunday-Thursday and then doing takeout Friday.  Weekends continue to be wide open as we navigate these uncertain times.  I begin working from home this week, so we will see how that goes.  My son will begin to do some school work during his days at home, it will be nice to have some routine.

  • Flank steak with salsa verde from the Whitewater Cooks cookbook, on the side I served baked potatoes, grilled peppers and asparagus and sautéed mushrooms.  The steak was outstanding as was the sauce, it would be great on chicken or fish.
  • Lemon garlic baked chicken drumsticks from @themediterraneandish we will eat this with a Greek salad and some steamed rice or butter noodles for the kids.
  • Spicy pork and kale soup from @eatliverun this recipe comes from my bestie who makes this soup on a regular basis.  I think besides the kale I will add some shredded carrot and possibly snap peas.
  • Turkey and white bean chili from @saltandlavender I couldn’t find any white kidney beans as the store today as the canned bean aisle was empty, but I did find one can of navy beans so they will have to work.  I will top the chili with avocado and some tortilla chips.
  • Chicken fried rice from @amandafrederickson my kids don’t love peas so I will add some snap peas to the rice.

I am not planning on making any bread this week!  I think that I need to do some research and find a slightly less time consuming recipe.  We made some energy balls last week, and my kids gobbled them up!  I am going to make another batch this week, and was also debating making some granola.  I have some dried blueberries and a ton of pecans, and found a recipe that sounds delicious!  Stay safe and healthy, make life easier with grocery list 124

Happy cooking,

Weekly meals Jan. 13 – Jan. 17

Meal updates from last week:
We really liked the shrimp, mango and cashew stir fry as well as the chorizo crumble.  We ate the crumble as a taco salad, and the kids ate theirs with some chips and shredded cheese.  As always, and probably forever we will LOVE hamburger soup from @bestofbridge.  I only make half of the recipe and it is always more than enough for us, plus we get at least four lunches.  We continue to be in a deep freeze in southern Alberta, and this week is going to be FREEZING!  I decided that today I was going to do some meal prepping as it was too cold to do anything else.  I made a large batch of curried butternut squash soup from @minimalistbaker, a tray of healthy granola from @gimmesomeoven and a chocolate banana olive oil cake from @fraicheliving.

This week we will be eating at home Sunday-Thursday, no plans Friday and then dinner with friends Saturday.  My son has ball twice, my daughter has dance and then they both have swimming.  It is going to be a busy week.

  • Roasted chicken with mashed cauliflower/potatoes and steamed green beans.  I bought a whole marinated chicken from @sunterramarket then made a potato and cauliflower mash and steamed some beans.
  • Creamy mushroom smothered pork chops from @thekitchn we will eat this with brown rice and another vegetable.
  • Classy chicken from @bestofbridge I will serve this with egg noodles.
  • Korean beef and rice bowl from @alyssa_therecipecritic I am hoping that the kids like this one!
  • Lemon herb salmon from @completelydelicious we will eat this with some green veggies and roasted cauliflower.

I did so much prep and cooking today I don’t have plans for any other baking this week.  I still have many brown bananas, but will save them until we are done the cake that I made today.  I did use some of them yesterday while making banana bread waffles.  This week staying warm is going to be the key!  Finally the grocery list 116

Happy cooking,

July 15 – July 19

Meal updates form last week:
There was a lot of eating out and meals on the fly last week as we had many different plans.  I really liked the spanakopita meatballs, I ended up making them into patties as I didn’t feel like making little meatballs.  I served these over a simple Greek salad with greens and tzatziki.  Other meals last week were simple and easy to prepare as well as many dinners out.  I am happy that this week is a little calmer and there will be more home cooked meals.

We are eating at home this week Sunday-Thursday, I had all intentions of making dinner tonight but we were invited to my parents for cabbage rolls, which is not a meal that I can pass up!  They were amazing as usual.  For the rest of the week we will be eating in and then the weekend is filled with birthday celebrations for my son and father.

The only baking I will be doing this week is a birthday cake for my son.  He has asked for a dog cake!  As usual I will be using my go-to chocolate cake recipe with pudding frosting from @thelittlekitchen.  I will also be making a lemon bundt cake for my dad’s birthday, this recipe was in my gramma’s recipe box and I will post a copy later this week.

Happy cooking,

Weekly meals June 17 – June 21

Meal updates from last week:
We loved the Thai chicken skewers with peanut dipping sauce, and the addition of grilled pineapple all the flavours were amazing!  We also really enjoyed the watermelon and steamed shrimp salad, as usual the kids ate all of the components minus the lettuce.  Friday night we went to friends for dinner and I took a Greek salad, Saturday we ordered takeout and Sunday we went to my parents to celebrate Father’s Day.  I took a strawberry rhubarb crisp that was really good.  This weekend we also celebrated my son’s birthday, as he is a summer birthday we like to have his party before the end of school.  He decided on a Nerf theme, so they made shields, had a full on battle, ate lunch (chicken fingers, fries and watermelon), battled some more and then had cake (my go-to chocolate cake).  It was a wonderful afternoon and he was so happy.

This week is the last week of baseball, which has been so much fun for our son and us as spectators.  It is also the last full week of school!  I cannot believe that this year is almost over, it has gone by too fast.  We will be eating at home Monday-Thursday there is no plan on Friday and possibly heading to friends on Saturday.

I don’t have a baking plan this week but have a collection of spotted bananas on the counter.  I also have lots of blueberries so we will see what happens with those two ingredients.  Make shopping easier with Grocery List 98

Happy cooking,
