Weekly meals April 9 – April 13

Meal updates from last week:
All meals from last week were great, I especially liked both bowls.  I supplemented the egg roll bowls with some steamed rice.  The Greek sheet pan meal is so delicious!  You must make tzatziki to go on top.

This week we will be eating at home Sunday-Thursday, Friday I will be out for dinner with a friend and then we have company staying with us on Saturday night.  I would imagine that I will cook something for us on that night.  If the weather person is correct then spring is going to show-up this week!  Everyone in our house couldn’t be more excited about it.

  • Vegetarian noodle bowl from @sandycoughlirne we ate this tonight and the kids loved the noodles.  In the broth I added shiitake mushrooms, baby bok choy and shredded carrots.  I topped the bowls with mini peppers, snap peas and a drizzle of sriracha.  This is the second ramen recipe that I’ve tried and I have to say that I liked the garage noodles better.
  • Steak with pomegranate pilaf from @rachelraymag it says to cook the steak in a frying pan, but as it is supposed to be nice I am going to grill mine.  We will see what the kids think of this recipe?!
  • Spring chicken asparagus pea salad from @aberdeenskitchen I cannot wait to try this recipe, it just looks like spring on a plate!
  • Grilled pizza with a caesar salad (no recipe for this)
  • Hot ham and cheese sandwiches with bacon and caramelized onions from @pinchofyum we will eat these with some raw veggies.  I am not using swiss cheese, instead I will use havarti as my kids prefer the taste.

We went to a small gathering last night and I brought a simple strawberry and spinach salad.  I used this recipe, but added some blackberries and no feta.  My son has been on a bagel and cream cheese kick lately.  I have no problem buying bagels, but two people who I know have made homemade ones and said they are easy and delicious.  I have made many recipes from @skinnytaste and I’m never disappointed, so I am going to attempt to make her easy bagel recipe.  Stay tuned for the results!  Don’t forget to print Dinner List 50

Weekly meals Feb. 5 – Feb. 9

Meal updates from last week:
Everything I made last week was delicious!  We especially enjoyed the turkey burgers and pork kabobs.  The potato soup was a perfect meal the have ready and waiting for us after swimming lessons.

Our house is getting over a weekend of sickness, hence why the blog post is a day late!  The worst part of the whole weekend was that we missed having a Super Bowl party, so there were no snack to be had!  This week we will be eating at home Monday-Thursday, I am going out with ladies Friday and then we are heading to the mountains for the weekend.  Weather continues to be cold and snowy, so we will be tucking into some warm and comforting dinners.

I don’t have any other plans for cooking or baking this week.  I will be working on my Valentine’s Day post to share with you later this month.  If there is a chance that you haven’t been to the grocery store then take Dinner List 43

Weekly meals Aug 7-11

Meal updates from last week:
Phew!  Last week was very busy, so much fun but I am happy that it’s over.  Our most favourite recipe from last week was the steak fajita foil packs.  They were so easy, tasty and had minimal clean-up.  I will be making them again soon.  We also enjoyed the strawberry streusel pie.

This week we will be eating at home Monday-Wednesday and then I will be heading out-of-town with our kids for three days.  It will be a short cooking week, but I will add an extra recipe that is one of my favourites.

  • Chicken kefta wraps from @whatsgabycooking I will serve these with a simple Greek salad, I will not be making the salad from her recipe.
  • Crunchy noodle salad from @inagarten this is one of Ina’s recipes that I have never tried before.  I have never been disappointed with any of her recipes.  I may grill some chicken and add it to the salad.
  • Monte Cristo sandwiches from @wearsmanyhats I have an abundance of leftover ham so I will use it to make these delicious sandwiches.  I will serve these with a green salad and raw veggies.
  • Grilled chicken with avocado tomato salad from @whatsgabycooking I love the cilantro vinaigrette it is a must with the chicken and salad.

For my daughter’s Birthday I cooked a bone-in ham, it turned out better than I had anticipated.  I glazed the ham with a mixture of honey and grainy mustard.  Her cake was very cute and easy to portion out as they were cupcakes.  I ended up making her a smash cake, and covered it in rainbow frosting.  It was very sweet.  I made these banana muffins this week and I think that they are going to become by new favourite.

Easter feast!

How are you spending your Easter weekend?  Will it be a large gathering or something small with family?  For the past couple of years I have hosted Easter, last year we had Easter lunch and the year before dinner.  Lunch was easier and less stressful than dinner, and we had more time to spend visiting and catching up.  This year we will be out-of-town for Easter, so I am unsure what it will look like.  I have pulled some recipes together that will help you create an amazing Easter meal.
