Weekly meals April 23 – April 27

Meal updates from last week:
We enjoyed all of the meals from last week, but the butter salmon bowls were by far our favourite.  Covering the salmon with the butter and then baking it, makes for a tender and juicy fish.  We also really enjoyed the pork meatballs with Chinese noodles.  This morning my son asked for waffles so I made a batch of these banana bread waffles using only whole-wheat flour.  They turned out very well and made enough to have leftovers for breakfast tomorrow.

This week we will be eating at home Sunday-Wednesday.  We are going out on Thursday night as a family and then I am heading out with friends on Friday.  The weather this week is supposed to be great, and I can guarantee that we will be grilling.  Friday there may be sausages and hotdogs on the menu.

  • Pork tonkatsu bowls from @seasonsandsuppers we ate this tonight and it was amazing!  The pork turned out crunchy on the outside and juicy on the inside.  The sauce was a little sweet, salty and spicy.  The kids tried the sauce but had theirs without.  I will make this again very soon.
  • Rainbow chicken salad with almond honey mustard dressing from @pichofyum as I have stated in the past my kids don’t like lettuce, but I know that they will like all of the components of the salad.  I might add a little buttered bread on the side for the kids.  I won’t be cooking my chicken in a frying pan but instead on the grill.
  • Loaded nacho sliders from @cookingforkeeps who wouldn’t want to eat a burger with queso?  This queso is made from jalapeño jack cheese so I would imagine that it is going to be spicy, I may leave the sauce off the kids burgers.  We will eat this with some fries and raw veggies.
  • Chopped salad with shrimp blue cheese and bacon from @howsweeteats via @skinnytaste this recipe comes from Jessica’s new cookbook The Pretty Dish.  As of late my kids have loved shrimp so I can’t see why they wouldn’t love this recipe.  I made this citrus dressing to go on top as the recipe only added a drizzle of olive oil.

I have my eyes on this fish taco bowl that I can see having sometime very soon.  Another recipe that I have been thinking about trying is for Greek lamb meatballs with avocado goddess sauce.  I am not a lover of lamb so I am not sure if I would use it or substitute another ground meat.  You grocery list is ready and waiting Dinner List 52

Eat your greens!

Heading into the summer months it is nice to make a meal that doesn’t involve turning on the stove or oven.  Enter the dinner salad.  Now, you may be thinking that greens will not make you feel full or even satisfied, but I beg to differ.  Topping your salad with a protein, either chicken, fish, tofu or cheese will turn your usual lunch meal into dinner.  I find feeding children salad, or maybe just lettuce very challenging.  My son still will not eat lettuce.  He will however eat all of the salad components, just on a plate minus the greens.  Below I am sharing some of my favourite dinner salad recipes:

Weekly meals April 3- April 7

Meal updates from last week:
As the meals I posted were ones that I have made before I do not have any updates, but I would love to hear from you, to see what you made and what you liked.

We are still away on holiday so meals are very unplanned.  This week I am sharing with you salads that can be a served as meals.  With warmer weather coming, salads are a great alternative to a meat and potatoes dinner.  With children, I usually deconstruct the salad and serve the ingredients separate.  I have made all of the salads listed below, and can say that I will make all of them again.  Enjoy!

BLT salad from @marthastewart as I have said before this salad is amazing!  We will usually have this salad at least once a month.
Thai cashew coconut rice with ginger peanut sauce from @hostthetoast we have had this salad many times and it is delicious every time.
Buffalo chicken salad from @smellslikehomeblog this is an amazing salad, full of bold flavours.
Bbq chicken COBB from @closetcooking this is a similar salad to the one above, but the cilantro lime ranch takes it to another level.
Greek chicken souvlaki salad from lemonsforlulu.com this is one of my all time favourite salads!  Add some pita bread and it is a well-balanced meal.
