Weekly meals August 2 – August 6

Meal updates from last week:
The two other recipes that I made from last week were great!  Loved the salad board and the peach and sausage supper.  I added garden potatoes to the sausage and peach meal, I also cooked it in a cast iron skillet on the BBQ, and it turned out so well.  Both meals are good during these hot summer days as everything is cooked on the grill.  We were out of town for a few nights, and ate some really delicious meals.  Thursday we ate smoked chicken cooked on a Traeger grill (I have secretly wanted one for years), roasted garden potatoes and beets and a spinach peach salad.  Friday we had BBQ pizza using a dough recipe from @marthastewart and topped them with a variety of toppings, I also made the same spinach peach salad from the night before.

This week we will be eating at home Sunday-Thursday, there are no plans for the weekend so we will just wait and see.  Tomorrow our daughter is turning 4!  I have made the different layers of her cake, but will spend some time tomorrow afternoon icing and assembling.  Stay tuned for cake pictures!

  • Homemade burgers with tots and corn on the cob.  I went to Costco on the weekend (insert shocked face), which is rare for me as I NEVER go.  I ended up buying the three pack os Kirkland organic ground beef, which is what we used for our burgers.  The meat was amazing, and so affordable for organic, $24 for a pack of three!
  • Asian peanut noodles with chicken from @skinnytaste I have made this recipe before and my kids gobbled it up, so I will be serving this for my daughter’s birthday dinner.
  • Vegetarian avocado sushi bowls from @whatsgabycooking I won’t be adding the cabbage to this bowl but will add all of the other veggies.
  • Greek chicken tacos from @bevcooks I’ve made a couple of her recipes lately and I am excited to try this one.
  •  I have some Italian sausages in the freezer as well as some Farmer’s sausage, so I will grill those with some peppers and onions and make a simple salad.

I don’t have any baking plans this week as it has and continues to be so HOT.  If the weather cools slightly I will make a batch of blueberry muffins, I made a blueberry buttermilk breakfast cake last week and it was devoured by the kids!  Next time I’m at the store I will get a carton of buttermilk so that I can make it again.  Shop with ease using grocery list 134

Weekly meals July 27 – July 31

Meal updates from last week:
Our favourite meals from last week were the shrimp bowl, and  the chicken and peach skewers.  I haven’t had a lot of luck making coconut rice, I find that it never tastes that coconuty, this was the same for this recipe.  I LOVED the grilled peaches with the chicken they turned out so well.  We also really liked the peach pecan crumble, my son finished off the entire pan.  I ended up making a simple charcuterie on Friday night, all ingredients were bought from the @italianctryyc and it was amazing!  We had peaches, prosciutto, basil, focaccia, olives, tomatoes and burrata.  Flavours were outstanding!  Saturday night we went out for dinner to a local spot that has just reopened called The Goose, food was so good, and you can sit on their patio social distance style.  If you live in the SW then check it out.

This week we will be eating at home Monday to Wednesday, we are going out of town for a few nights and will be back at the beginning of the weekend.  Next week is our daughter’s birthday and she has requested a Paw Patrol cake (insert scared face here!).  I am going to bake the pieces of the cake tomorrow so that it is done, and then will freeze it.  I find that icing a mostly frozen cake is much easier as you don’t get so many crumbs.  As always I will be using our favourite chocolate cake recipe with pudding frosting.

  • Baja grain bowls from @howsweeteats I made these tonight and they were amazing!  There isn’t any protein with this recipe so I bought some frozen tempura shrimp, baked them off and served them on top of the rice.  They were a great accompaniment to the bowl.  I really liked the dressing and would make it to serve on a salad.
  • Grilled chicken, vegetable and avocado salad board from @weelicious this is a new recipe from Catherine that sounds amazing!  I’m not going to be using eggplant as it is not a favourite in our house, instead I bought a yellow and green zucchini.
  • Roasted sausage tomato and peach supper from @thedaleyplate since it is peach season I need to take advantage!  I went to the Farmer’s Market on the weekend and stocked up on peaches, so I am ready to cook and bake with them.

I am not sure what the cooking plan is while we are away, but here are a few other recipes that I have on my must-try list:
Grilled salmon with citrus salsa
Coconut lime chicken
Zucchini ribbon pizza with chicken
Buttermilk blueberry breakfast cake

The grocery list will return next week.

Stay healthy,

Weekly meals July 20 – July 24

I’m back!!  I know that it has been a while since my last post, but we were road tripping and enjoying some family time.  We’ve been home less than a week, but have been busy celebrating my son’s 10th birthday.  Full birthday meal and cake recap will come later.  We cooked every meal while we were away and as promised I will share my dinner ideas with you:

  • pre-made kebabs (purchased from Save On Foods) served with salad
  • pizza cooked on the grill using naan bread as the base
  • grilled sausages, potatoes, peppers and onions
  • BBQ chicken salad from @skinnytaste
  • Turkey tacos made into taco salad from @culinaryhill
  • Homemade fish and chips (I didn’t make this meal, but provided slaw and roasted potatoes and carrots as side dishes)

Once we got home I couldn’t wait NOT to cook, so last week for our anniversary we ordered sushi to have with the kids.  We ended the week eating home cooked meals since I had some time to do some recipe searching.  We had zucchini turkey burgers from @bigdeliciouslife you can find the recipe right on her Instagram feed, and skillet chicken with rice, zucchini and corn from @bevcooks.  My son requested homemade pizza for his birthday on Sunday, so I bought dough from CO-OP and all of the necessary toppings and we did make your own pizza night.  For his cake I used my go-to chocolate cake recipe with pudding frosting and made it into a bowl of popcorn.  It turned out so well, way better than I had expected.

This week we are eating at home Monday, Wednesday and Thursday, my husband and I are going to friends for dinner Tuesday and Friday my son is having a small group of kids for a drive in movie in the backyard.

  • Easy grilled enchilada chicken from @thismessisours I served the chicken in corn tortillas with a simple pico de gallo and some sour cream, and added some gilled corn on the side.  You can make your own enchilada sauce but I opted to buy some from the store.  This meal is so quick and easy and would be great made into a salad.
  • We are out for dinner but I am taking dessert, I have a box of peaches and decided to make a peach and pecan crisp from @smittenkitchen, her recipes never disappoint.
  • Shrimp bowl with coconut cilantro lime rice and pineapple salsa from @twopeasandpod this is a new bowl recipe that I can’t wait to try!
  • Grilled chicken and peach kebabs from @aimeebourque I will serve these with some roasted potatoes and green beans.

Since I have so many peaches I am going to try to bake a few other things besides the crisp.  A long time ago I made peach cobbler scones from @joythebaker and they were amazing.  I also found a recipe for peach upside-down cake that looks divine!  If I find any other peach recipes I will pass them along.  After a long hiatus the grocery list 133
is back!

Stay safe,

Weekly meals June 29 – July 3

Meal updates from last week:
My meals didn’t go as planned last week, we decided to go out for our first restaurant dinner since COVID.  Our son had golf lessons and then we went to Brown’s Social House,  there were very minimal patrons, but food was really good and service was great.  I loved the watermelon salad that I made last week.  Our favourite meal was the Mexican pizza, it was a hit with the kids and so easy to make.  I never made the strawberry salad, but I did make the couscous salad with lime basil vinaigrette.  I was going to substitute brown rice instead of couscous but I ended up leaving it out and added some avocado.  It was amazing!  I served the salad with marinaded grilled chicken thighs from @littlebrokenblog

This week I am taking a break from my traditional recipe searching, and listing our favourite family meals.  I will be back next week with all new recipes for you to try.  For now give our tried and true recipes some love!

Happy cooking and Happy Canada Day!

Weekly meals June 22 – June 26

Meal updates from last week:
We enjoyed all meals from last week, and almost all were from @skinnytaste.  Our favourites were the buffalo chicken salad and the Asian noodles with chicken.  My kids devoured the noodles, and both went back for seconds.  We also loved the crispy shrimp bowls, I have made this recipe before and it doesn’t disappoint.

This was the first week in a long time that we haven’t done takeout and that’s because we ended up going camping for the weekend.  We went with another family, so we divided the grocery list and meal prep so it would be easier.  Here was our menu:

Friday: grilled Spolumbos sausage, corn on the cob, roasted potatoes with onions.  Everything was cooked on the outside stove and on the camp fire.  We made s’mores using the celebration cookies that already have the chocolate on them.
breakfast: all the berries, yogurt and granola.  The kids ate cereal and fruit.
lunch: wraps with meat, cheese and all of the veggies.  We also had hummus and more fruit.
dinner: taco salad, the meat was precooked so only needed to be heated and added a can of corn.  Served with lettuce, a salsa of avocado, tomatoes and cucumbers.  Topped with sour cream, cilantro, cheese, hot sauce and chips for dipping.  Kids got to make s’mores cones, fill waffles cones with marshmallows and your choice of chocolate.  Wrap with tin foil and warm over the fire.  Marshmallows will be soft, and chocolate will be melted.  These are so good!
breakfast: scrambled eggs, bacon, fruit and bread with peanut butter as we didn’t have a toaster.

We had an amazing time and the food was so good!  It is much easier to divide the shopping and the meal prep especially when there is more than one family.  Just because you go camping doesn’t mean that you only have to eat hot dogs, be creative, plan and eat well!  For Father’s Day we had the beef keftas from @amandafrederickson served with grilled pita, Greek salad, hummus and tzatziki.  For dessert there was peanut butter pie from @pioneerwoman and my gramma’s apple pie.

This week we will be eating at home Monday-Thursday, we don’t have plans for the weekend, but I would imagine that we will do takeout one night.

  • Grilled chicken thighs seasoned with cajun seasoning and topped with bbq sauce, tater tots, baked beans and an arugula watermelon salad.
  • Couscous salad with lime basil vinaigrette from @pinchofyum I will serve this with some sautéed shrimp.  I don’t plan on using couscous for the salad as we don’t love it in our house, instead I will make some brown rice.
  • Mexican pizza from @estaceydos to supplement this meal I will add some avocado, sour cream and shredded lettuce.
  • Strawberry spinach salad with chicken and avocado from @foodiecrush loving a dinner salad especially as the weather gets warmer.

I don’t have any plans to bake this week, but that hasn’t stopped me before.  I have a few bananas that are getting spotty, and I have been thinking about making some protein balls so stay tuned!  There isn’t a grocery list for this week as I am a day late, it will be back next week.

Happy cooking,

Weekly meals June 15 – June 19

Meal updates from last week:
Last week I didn’t follow my meal plan as I usually do.  I made the tortilla soup and it was amazing.  I cooked the sausage and served it with grilled asparagus and a spinach salad.  The other meals that I had planned I didn’t end up making, so I will save the cobb salad and cauliflower bowl recipes for a later date.

This week we will be eating at home Sunday-Thursday, we planning a weekend camping trip if all goes as planned and the weather holds.  This weekend we ordered from Globefish Sushi and Browns Social House, both meals were really good.  It will be very strange to eat out in a restaurant again after we haven’t been in so long!  Most recipes this week are from Gina Homolka’s Skinnytaste Cookbook.  Sometimes it’s inspiring to look through cookbooks and get dinner ideas.

  • Teriyaki pork chops Teriyaki pork 2 from @skinnytaste I served these tonight with sesame noodles and an Asian slaw.  The pork was delicious, her recipe says to grill for 6-7 minutes a side, my pork loin chops were small so I grilled them for 4 minutes a side.  They were perfectly cooked.
  • Buffalo chicken salad Buffalo chicken salad 2 again from @skinnytaste I love a good dinner salad and I think this one will be great.
  • Naked Greek feta-zucchini turkey burgers from @skinnytaste I am going to serve these with a large Greek salad.
  • Crispy shrimp bowl from @joyous.apron I made this not that long ago and it was so good I decided to make it again.  My kids and husband will eat theirs in a bun.
  • Asian peanut noodles with chicken from @skinnytaste I make a very similar dish from Anne Lindsay, but it is always nice to try something different.  I don’t usually add the chicken but this time I am going to add it.

Last week I made a batch of buttermilk blueberry muffins with cinnamon streusel, I’ve tried a lot of blueberry muffin recipes and this one was great!  There was only one difference and that was I used vegan butter instead of regular butter.  I bought it on a whim, but really wanted to give it a try, and it made the muffins so soft and fluffy!  I don’t have any plans to bake this week, but if we are planning on camping I might make a batch of protein balls. Dinner List 132 ready for the taking!

Stay safe and healthy,

Weekly meals June 8 – June 12

Meal updates from last week:
Every meal from last week was great!  I didn’t end up making the sushi bowls, but I will be making them in the near future.  Both pork dishes from last week were great, the sliders with grilled pineapple were delicious.  The pork tacos were outstanding.  The pork brought a different flavour to the tacos, paired with the apple slaw it was a perfect combination.  We also really liked the mango salad.  I will make any and all of these recipes again soon.

On Friday night we ordered takeout from Brown’s Social House, this has been the best takeout that we have gotten since COVID began.  Some of the dishes were tired were: crispy ramen, Szechuan beef bowl and southwest bowl.  All dishes were great.  Saturday we spent the day riding bikes and then had salmon, roasted potatoes, Brussels sprouts and creamed spinach for dinner.  I also made a strawberry rhubarb crisp and some mini chocolate chip cookies.

This week we will be eating at home Monday-Thursday, we have no plans for the weekend we will see as we get closer.

I bought a ton of blueberries at the grocery store with the intention of making a batch of muffins.  I am not sure what recipe I will use, but I still have some buttermilk left in the fridge.  There isn’t a grocery list this week it will be back next week.

Happy cooking,

Weekly meals Jun 1 – June 5

Meal updates from last week:
Two of the recipes from last week were amazing!  The chicken gyros salad and the spring roll bowls.  The chicken marinade for the spring roll bowls was outstanding, paired with some rice, lettuce, cucumber, carrot and a yogurt dressing this bowl was one of the best.  As always we really liked the kale and sausage soup, this is a soup that my kids do enjoy, which is rare because soup is not their favourite.  We did Thai takeout on Friday night and then had chicken sandwiches with potato salad on Saturday night.

This week we will eat at home Sunday to Thursday, it has been our COVID pattern to do takeout one night on the weekend and then stay in for the other.  I am serving pork twice this week just to change things up a little.

  • Beef kefta with hummus and tomato and cucumber salad from @amandafrederickson I served this meal tonight and it was great!  I didn’t make the tomato and cucumber salad, instead I made a Greek salad.  I also used store bought hummus, as I didn’t have enough time to make homemade.  This recipe would be good with any ground meat, I think that lamb would pair great with these flavours.
  • Hawaiian pork and pineapple sliders from @cookinglight I will serve these with raw veggies and tater tots.
  • Mango chicken salad from @diethood as with all dinner salads my kids will eat all of the components minus the lettuce.
  • Pork tacos with apple slaw from @saltandlavender I haven’t ever used pork to make tacos so I am excited to try this new recipe.
  • Teriyaki salmon sushi bowl from @myglutenfreeguide this bowl has all of the ingredients I love!

I don’t have any plans to bake this week, I do have leftover buttermilk that I don’t want to waste, so possibly something with blueberries and the buttermilk.  My rhubarb is also growing so well this year!  This week I might have to cut and bake with my rhubarb.  Shop safely with Dinner List 131

Stay healthy,

Weekly Meals May 25 – May 29

Meal updates from last week:
We really enjoyed the Greek chicken thighs with Greek salad, hummus and pitas, but our most favourite meal from last week was the pad Thai, it was outstanding!  I purchased the shrimp from the Calgary Farmer’s Market, they were huge and added so much to the dish.  I didn’t have a chance to make the Mediterranean linguine, I will let you know when I try it out.  This weekend we ordered food from Cactus Club and Mercato Mission, the food from Mercato was outstanding!  We ordered a simple pasta with tomato sauce, grilled pork ribs and sautéed green beans with shallots.  I would order from them again soon, and they also do pizza takeout.

This week we will be eating at home Sunday to Thursday, we will probably do takeout or BBQ on the weekend.  The weather is supposed to be really nice this week, so I am going to try and use the grill a lot.  Tonight we had elk burgers, coleslaw, baked beans and corn on the cob.

  • Chicken gyros salad from @smittenkitchen this salad sounds delicious, and as always my kids will eat all the components minus the lettuce.
  • Minestrone with kale and turkey sausage from @foodnetwork I have made this soup many times before, and it has been gobbled up by all!  When I use sausage in any recipe I always buy Spolumbos sausages.
  • Spring roll bowls with grilled chicken from @littlebrokenblog you know that I love a one bowl meal!
  • Chicken caesar burgers from @iowagirleats I haven’t made these in a long time, they are so easy and packed with flavour.  I will serve tater tots and a green salad on the side.

Last week I made a batch of good morning protein cookies from @weelicious they were really good, and a great snack to have on hand.  I ate one smeared with peanut butter for breakfast on the weekend.  I have a few spotted bananas that need to be used, so I think that I will try to make some muffins.  One of my favourite banana muffin recipes is from @cookieandkate they are a one bowl recipe and you can choose to add chocolate chips or blueberries.  Shop safely with Dinner List 130

Happy cooking,

Weekly meals May 18 – May 22

Meal updates form last week:
My husband and I loved the mushroom bowls with kale pesto, and as I noted on my Instagram my kids didn’t eat them!  I didn’t get a chance to make the BBQ chicken thighs as we had beef burritos instead.  The salmon was also delicious, I used regular pasta instead of soba noodles.  I did make a large batch of hummus using my newest kitchen appliance.  It turned out really well, a great way to get my daughter some much needed protein.  She isn’t really a meat eater, so I try to get her to eat hummus, edamame, nuts and beans as much as possible.  Every once and a while she will surprise us and take back some chicken or beef, but that is a rarity.

This weekend we did sushi takeout from Globefish, Asian pork tenderloin and takeout tacos from Native Tongues.  I will share our Monday meal below.  This week we will be eating at home Monday-Friday, we usually do takeout Friday nights, but I found a recipe that I might try instead of doing takeout.  Saturday we will do takeout for sure.

  • Greek marinaded chicken thighs from @playswellwithbutter we ate the grilled chicken with a Greek salad, grilled pitas and hummus.
  • Grilled Spolumbos mild Italian sausages with corn, tater tots and raw veggies.
  • BLT salad with buttermilk dressing from @marthastewart this is a salad that I make a lot.  My kids like to eat all of the ingredients except for the lettuce.  I usually make them a quesadilla to supplement their meal.
  • Pad Thai, I haven’t decided which recipe I am going to use.  They are both pretty similar, so it will either be this one or this one.  I am going to use prawns as my protein.
  • Mediterranean Linguine from the Earl’s cookbook, I have had this book for a while, but I haven’t cooked anything out of it.  As per a recommendation from a friend I am going to try this recipe.

I made a small dessert tonight, it was another recipe from @dessertfortwo.  I really love her recipes, and what I love even more is that they are small batch recipes, so there isn’t a ton leftover.  I have a lot of spotted bananas, so what better way to use them, then in a banana sheet cake with cream cheese frosting.  It was amazing, the only thing that I would change would be to decrease the amount of sugar.  The recipe calls for 1 cup of white sugar, next time I will try with 3/4 cup.  If you haven’t ever gone to her website then you need to go now, so many great small batch recipes.  I still have three more bananas that need to be used, so I think that I will try to make good morning protein cookies from @weelicious.  I am sure that I can convince my kids to eat cookies for breakfast!  I don’t have any other plans to bake this week, but that has never stopped me before.  There isn’t a grocery list this week, it will be back next week.

Stay healthy and stay safe,
