Weekly meals Oct. 23 – Oct. 27

Meal updates from last week:
There are no meal updates from last week as we were and still are on vacation!  I hope that you enjoyed cooking from my favourite soups and stews.

We arrive home on Wednesday after a red-eye flight, we will see how that all goes for the children?!  I will be cooking Wednesday to Sunday as we have been doing some eating out this vacation.  It will be difficult to get back into the swing of things, but we have enjoyed every minute of being away.

I have my eye on a few other recipes this week: granola bark and pumpkin muffins.  After some jet-lag we will see how much cooking I get done!  Grocery lists will start again next week.

Weekly meals Oct. 16 – Oct. 20

Meal updates from last week:
All of the recipes that we ate from America’s Test Kitchen were very good.  Our favourite recipes were: pork stir fry and turkey meatballs with rice.  We ate the pork with chow mein noodles, which were a great accompaniment to the pork and sauce.  The lemon turkey meatballs were delicious, I added some arugula to the skillet just to give it some colour.  I’m going to start visiting their website to see what other recipes I can find.  I also made these muffins, these muffins are not very sweet, but the addition of the chocolate chips gives it that little extra that you need.

This week we are off on a family vacation!  We cannot wait to spend some down time together.  Although there will be some cooking, we will be enjoying some meals out as well.  With this in mind I am going to share with you some of my favourite soups and stews:

Weekly meals Oct. 9 – Oct. 13

Meal updates from last week:
All meals from last week were very good.  Our most favourite recipe was the meatball fondu, the kids ate theirs with pasta, the adults had theirs with toasted ciabatta.  We ended last week hosting dinner with friends.  The theme was Mexican, I made pork tacos we also had shrimp tacos, guacamole, layer dip and mud pie.

This week we will be eating at home Monday-Friday, Saturday night my husband and I are going to a fundraiser, and then Sunday we are headed on a family vacation.  Tonight we celebrated Thanksgiving with family, this year we decided that we were going to have ham instead of turkey.  It was such a nice change, we enjoyed scallop potatoes, roasted brussel sprouts, kale salad, biscuits and of course Pumpkin Pie!

On the weekend my mom shared with me one of her new America’s Test Kitchen magazines.  I had a chance to browse the recipes, and decided that I will cook five of their recipes this week.  I have looked through their magazines before and also had the chance to try a few recipes.  This will be a first for me, to cook from one source for the entire week.  We will see how things go!

I have also been eyeing a few other pumpkin recipes that I am excited to try.  These cookies sound easy and are also GF.  I am a sucker for granola and this one sounds amazing!  Take your Dinner List 31 to the grocery store for ease of shopping.

Weekly meals Oct. 2 – Oct. 6

Meal updates from last week:
The recipes from last week were great.  The chicken parmesan from @halfbakedharvest was the best that I’ve ever eaten!  I will say this again, if you are looking for a new cookbook then go out and buy it.  The other recipe we loved was the meatloaf burger steaks.  These eat like a burger and taste like meatloaf.  I also made the pumpkin oatmeal bites, which were so chewy and delicious.

This week we are eating at home Sunday-Thursday, I am sharing what we ate tonight on the meal plan.  Currently, I don’t have a dinner plan for Wednesday but will share some easy weeknight ideas with you.  When I know what I am making I will add it to the meal plan and post a picture on Instagram.

It is hard to believe that Canadian Thanksgiving is this weekend!  This week I will be looking over recipes and planning my menu.  Stay tuned later this week for my Thanksgiving menu with recipes.  Last week I bought a waffle iron, I have been making waffles and then freezing them.  The night before I put some in the fridge and then in the morning I pop them into the toaster.  My kids have been loving this breakfast.

Weekly meals Sept. 25 – Sept. 29

Meal updates from last week:
The meals from last week were winners!  The roasted salmon tacos were simply amazing, if you enjoy fish these tacos are a must.  Another great recipe was the chicken pot pie topped with puff pastry.  We ate the entire crock pot!  When I make this recipe again I am going to make biscuits instead of using puff pastry.

This week we are eating at home Monday-Thursday.  My husband is heading out-of-town so I am going to make something easier on Thursday night.  I am hoping to go out for dinner on Friday night.  I got the newly released Half Baked Harvest cookbook and will be making a recipe from the book this week.  I highly encourage you to purchase her cookbook, the photography is simply amazing.

  • I am going to cook chicken parmesan from @halfbakedharvest this recipe is available through her cookbook.  For an alternative, you can try the chicken parmesan sandwich from @thegiadzy.  We will eat ours with spaghetti, but you could serve the sandwich with a caesar salad.
  • Meatloaf burger steaks with tomato gravy from @cooking light we will eat these with roasted or mashed potatoes and steamed broccoli.
  • Chicken gyro salad from @smittenkitchen all of the Greek flavours I love in salad form.
  • Breakfast tacos from @cookingclassy who doesn’t love eating breakfast for dinner?!  I will serve this with some fresh fruit.

While grocery shopping this week I picked up some canned pumpkin in hopes that I will have a chance to bake/make some pumpkin goodies.  I’m really excited to try these pumpkin oatmeal energy bites.  If you are looking for more pumpkin recipes have a look at my welcome fall post from last week.  I also have an abundance of pears, I found a recipe for caramel almond pears, they look so cute!  Print the Dinner List 29 before you head to the grocery store.

Weekly meals Sept.18 – Sept.22

Meal updates from last week:
The best recipes from last week were the sloppy joe stuffed peppers, which we ate on the same day as the cauliflower hot wings.  Both recipes were from @ayeshacurry and both were amazing!  Some ate the sloppy joes in peppers while others had the meat in buns.  We ate the hot wings as an appetizer and they were gobbled up in less than ten minutes.  If you are looking for a healthy game day recipe this one is a must try!!

This week we will be eating at home Monday-Friday we are heading to my parents for dinner tonight, and I am bringing baked beans to contribute to the meal.  If you are looking for the recipe simply use the search feature.  The weather is continuing on a cooler trend, so some recipes this week are more comfort food based.  I went to the farmer’s market today and stocked up on the last of peaches and corn.  I also bought a huge bag of apples and some green and yellow beans.

  • Buffalo turkey burgers from wearychef.com we will eat this is grilled corn and waffle fries.
  • Roasted salmon tacos from @inagarten I haven’t made salmon for a very long time, but watched an episode of Barefoot Contessa where she was making this recipe.  It looks simple but delicious.
  • Pizza buns from @rebecca_simpleasthat if you’ve never made these you must!  My son loves these pizza buns, and they are great in lunch boxes the next day.  We will eat these with a caesar salad.  Hint: if you are looking for a short cut use Pillsbury pizza dough, or even their crescent roll dough.
  • Slow-cooker creamy chicken and mushroom pot pie from @realsimple this is a new recipe for me, and to be honest I am not a lover of pot pie.  I decided to give this one a try because it looks easy and my husband does love a pot pie.
  • Greek sheet pan chicken souvlaki and potatoes from @halfbakedharvest I haven’t made this recipe for a long time, and everyone know how much I love a one pan meal!

Breakfast lately has been a mixture of cereal, toast and muffins.  I saved some french toast fingers from the other night to serve for one breakfast this week.  During my Sunday shopping trip I found these, which I thought would be a great addition to our breakfast choices. This salad looks amazing, full of fall flavours and a great lunch option.  I wanted to buy a large bag of apples so that I could try these and these.  Take the Dinner List 28 with you on your weekly shopping trip.

Weekly meals Sept. 11-Sept. 15

Meal updates from last week:
Of all the meals from last week, the chicken enchilada roll-ups were by far the best.  Everyone loved them!  We ate the chicken with a cilantro lime brown rice that was covered with the warm enchilada sauce.  Simply delicious.  I really liked the teriyaki burgers, but my son wasn’t a huge fan of the sauce.  Next time I would use less soy as I found them a little too salty.

This week we are eating at home Sunday-Thursday.  We will probably do take-out on Friday.  The weather is going to change drastically this week, so I am going to pull out the slow cooker.  It is also my husband’s Birthday, we will be celebrating at home on Tuesday and then heading out for a date on Saturday.

  • Sloppy joe stuffed peppers from @ayeshacurry I saw this recipe on the Food Network and had to give it a try.  I will be making half in peppers and serving the rest on buns.  As an appetizer during football this afternoon I will be making her cauliflower hot wings.  I know that this may sound strange but they look so good!  I will make this dip to go with it.  We will eat the zucchini cookies from yesterday for dessert.
  • BLT salad with buttermilk dressing from @marthastewart this is a household favourite.
  •  We are celebrating my husband’s Birthday and he wanted steak and potatoes on the menu.  I bought tenderloin that I will marinate in soy, Italian dressing and lemon.  This tenderizes the meat and makes it so flavourful.  On the side we will be having mashed potatoes, roasted beets and a green salad.  For dessert he wants to go to our favourite local ice cream shop.  If you are ever in the Calgary area Village Ice Cream is a must!
  • Tortellini soup from @iowagirleats I make a version of her recipe, but mine is much easier as I use an organic store bought tomato soup.  I have raved about this soup before, you can find it in most major grocery stores.  I heat the soup with the cheese tortellini inside and then top with parmesan when it is ready to serve.  We will have a caesar salad on the side.
  • Slow cooker lemon garlic chicken from number2pencil.com depending on how I am feeling I add the lemon and garlic to the cooker, or sometimes I leave it out.  If I leave it out then I spread some butter over the chicken and then sprinkle liberally with salt and pepper.  When the chicken is cooked I use the juices to make a gravy.  It makes really good gravy.  We will eat this with roasted garden carrots and potatoes.

If you follow me on Instagram you will know that I baked three times last week!  I used zucchini from our garden to make muffins and cookies, and also used our past due bananas to make some loaf.  For links to the recipes go to last week’s meal plan.  If we decide not to do take-out on Friday then I am going to make this recipe that sounds amazing.  Fall is in the air and I am beginning to think of pumpkin, pumpkin, pumpkin.  What are your favourite pumpkin recipes?
