Weekly meals April 15 – April 19

Meal updates from last week:
As always my family LOVED the classy chicken, I always make a double batch so that we have leftovers for the week.  We also really enjoyed the honey garlic pork and the BLT salad is always a crowd pleaser.  I didn’t get a chance to make the miso chicken salad as we went out for dinner on a whim, it will be added to this week’s plan.  This weekend I went out for dinner with a friend on Friday, we went to Pat and Betty, the food was amazing.  Saturday we had friends over and ate outside for the first time this year!  I made BBQ chicken and rice bowls and served lemon posset for dessert.  Tonight we had family over for dinner and grilled some Lina’s chicken, on the side I made baked potatoes with all of the toppings, a green salad with ranch dressing and lemon loaf for dessert.  I guess I am on a lemon kick right now!

This week we will be eating at home Sunday-Thursday, we have lots of kids activities this week and have a basketball tournament all weekend.

  • Spicy miso chicken salad from @thedefineddish I will serve this in lettuce cups, but will also make some rice to fill them up.
  • Creamy vegetable alphabet soup from @foodbymaria the weather is supposed to get much cooler this week so I thought that I would make some soup.  My daughter LOVES soup more than anything, so this will be a winner with her.
  • Spanish rice and beans from @dishingouthealth this will be a meatless meal, but I will serve tortillas so that the kids can make theirs into veggie burritos.
  • hamburger soup from @bestofbridge this is a soup week for our family!  I am going to make this soup with a mixture of deer and pork, I have never used game meat in a coup recipe so we will see how it tastes.  This soup is the most requested soup in our house.

Last week I finally made something with blueberries, I made the blueberry buttermilk breakfast cake.  The entire cake was gone in a matter of days.  It is a great little afternoon treat to have with a coffee or cup of tea.  I made two different lemon desserts this weekend, so I don’t think that I will be baking anything this week.  Here’s a few other recipes I found this week: sweet cherry Italian margarita, oatmeal raisin bars, berry cheesecake cookie bars and two huge chocolate chip cookies.  Streamline your shopping with  Grocery List 9 24.

Weekly meals Feb. 26 – Mar. 1

Meal updates from last week:
We LOVED two meals from last week: sheet pan meatballs with roasted veggies and the chicken bowls with chili sauce.  This weekend I cooked on Friday (chicken bowls with Calabrian chili sauce), we went to friends Saturday (I took a mixed berry and feta salad) and tonight we grilled beef burgers and chicken drumsticks.

This week we will be eating at home Sunday-Wednesday, Thursday my husband and I are off for a weekend away.  The kids will be home with family.  I won’t have any time to bake this week as I am working every day until we leave.

  • Grilled beef burgers and chicken drumsticks, on the side I served house salad and skinny fries.
  • Hamburger soup from @bestofbridge, I prepped this soup on Friday knowing that I would have no time to cook Monday.
  • Thai noodles with chicken and broccoli, a family favourite and a recipe that my son asks for all of the time.  I will be making this meal meatless.
  • Bean and vegetable burritos from @smittenkitchen, I will prep this filling on Tuesday night and then fill and heat in the air fryer on Wednesday night.
  • Baked ziti from @saltandlavender, I will also be prepping this meal so that it is ready to be reheated for dinner on Thursday night.

No baking this week, but I have found some new spring forward recipes that I would love to share: lemon raspberry cheesecake bars, crumb cake doughnuts, popcorn cake, raspberry ice cream and Easter sugar cookies.  There is no grocery list this week, it will be back next week.

Weekly meals Feb. 5 – Feb. 9

Meal updates from last week:
We really enjoyed the loaded Greek potatoes, turkey bowls and the salmon.  The pasta was good, but I think that I like traditional pesto better.  This weekend my husband and I were away in the mountains skiing, eating and spending time together.  We ate at Bridgette Bar and Where the Buffalo Roam both in Canmore, and before leaving today we grabbed brunch and coffee at Communitea.

This week we will be eating at home Sunday-Thursday, Friday and Saturday we will be eating out.  Super Bowl Sunday we don’t have any plans, so we will just have to wait and see what’s on the menu.

  • Hamburger soup from @bestofbridge, today I added double to veggies and served it with some flaky buns.
  • Smashed Banh Mi tacos from @cheftomwalton, you can find this recipe on his IG page.
  • Chicken yiros bowls from @mediterranean.diet.plan, this recipe can be found on their IG page.
  • Miso dumpling soup from @dennistheprescott, this recipe is from his IG page.  I will use store bought mini dumplings that I got from CO-OP last week.  They are the perfect little dumplings to add to any soup.
  • Crispy salmon bites from @lifemadesweeter I will serve these with edamame, rice and sliced avocado.

I am not sure if I will bake this week, I do have some bananas that need to be used, but we will see if I will time.  I did find two other baking recipes that are on my list to try: lemon creme brulee cookies and lemon blueberry muffins.  I sense a baking theme with these recipes!  Or maybe I should make these brown sugar cinnamon pop tart shortbread?!  Make your life easier by using my grocery list 4 24

Weekly meals Oct. 2 – Oct. 6

Meal updates from last week:
The sheet pan sesame chicken was great, an easy and flavourful meal for busy weeknights.  I made the sour cream noodle bake on Friday and the chicken enchiladas on Saturday, both were great.  The kids and my husband loved the noodle bake, it was almost like a lazy lasagna.  The other great recipe from last week was the pumpkin doughnuts from @nytcooking, please remember that you need a subscription for view recipes.  After a weekend of company and cooking I opted for sushi for dinner, it did not disappoint!

This week we will be eating at home Monday to Thursday, then we are off to spend Thanksgiving weekend with friends.  We are keeping out menu simple: roasted turkey, mashed potatoes, harvest salad, roasted brussels sprouts, gravy and pumpkin pie.  Our weeknights are busy busy busy, so I am trying to be well organized and make double batches so we can have leftovers.

Last week I baked pumpkin doughnuts, but that was all that I had time for.  I currently have a large container of apples from friend that need to be used, so I have complied a few recipes that I am going to try to make: baked apple oatmeal, big apple crumb cake, apple muffins and apple cinnamon cake.  Finally the grocery list 23 23 is back!

Weekly meals Sept. 4 – Sept. 8

Meal updates from last week:
The two meals that we enjoyed the most were the flank steak as well as the sheet pan chicken with corn.  The sheet pan meal was amazing, and I will be making it again soon.  I served the Thai noodles to company on Saturday night along with fresh spring rolls and choco tacos for dessert.  Friday night we ordered sushi and Sunday night we ate leftover Thai noodles.  Tonight we are eating out to celebrate my mom’s birthday.

This week we will be eating at home Tuesday, Wednesday and Thursday.  Friday we are heading out for our last camping trip of the season.  Today I took some time to prep soup and muffins for the week ahead.  Both recipes are from the @bestofbridge, I went with a family favourite hamburger soup and a batch of banana muffins.

Here are some other recipes I want to try: panzanella salad with peaches and corn, lemon brownies, chopped salad and peach cobbler cookies.  This week is a short week and the grocery list was also short, I will get back into posting my lists next week.

Weekly meals April 11 – April 15

Meal updates from last week:
All meals from last week were great.  I really enjoyed the shrimp bowls, but I have to be honest I bought shrimp tempura and didn’t use her recipe.  The tacos and shawarma were also really good.  This weekend we were off celebrating the life of an amazing woman.  We did a lot of driving this weekend, but it was wonderful to spend time with family.  This week we are eating at home Sunday-Thursday, I will be out for dinner both Friday and Saturday night.  The weather is finally starting to feel like spring, when we arrived home last night we had burgers and sausages on the grill with a house salad.  We had ham on the weekend so I am not feeling the need to make one this week.

I don’t have any baking plans this week, but I did find a recipe for a roasted carrot salad that looks divine!  Asparagus has hit the grocery stores and it is currently very affordable, make sure that you get your fill while you can.  Tagliatelle with asparagus and peas, roasted asparagus, cheesy garlic asparagus and Tuscan style asparagus.  No list, no problem, use mine Grocery List 9 23

Weekly meals Mar. 13 – March 17

Meal updates from last week:
The potato and corn chowder was amazing!  As I posted on my IG account the picadillio is so versatile, I had mine with steamed rice and the kids ate theirs as tacos.  The sheet pan peppers and sausage was so simple but exactly what we needed on a busy weeknight.  Friday night we went to Annex Brewery and ordered from Lil Empire, they make the absolute best burger!  Saturday we hosted friends and my husband’s dad.  I made a sausage ragu, house salad and no-bake cheesecake jars topped with berries.  Tonight we ate at home, and this week we will be eating at home Monday-Thursday.  We don’t have any weekend plans, but hope to get out skiing for possibly one more time.  Kid activities are crazy this week!  I made banana carrot muffins and doubled our hamburger soup, so that we are prepared for the busy week ahead.

  • Hamburger soup from @bestofbridge I served this with tray buns and house salad.
  •  Banh Mi rice bowls from @halfbakedharvest this is a recipe that I have never made, it sounds so delicious!
  • Pesto chicken salad wraps from @halfbakedharvest, I thought that this would be the perfect meal for a busy Tuesday.  I like that the kids can add anything that they want to their wrap.
  • Linguine and shrimp from @skinnytaste sounds simple but very tasty.
  • Thai garlic and black pepper tofu from @foodiecrush I have been cooking with more tofu as it is extremely affordable and my son loves it!  I will serve this over rice.

I have already baked for the week ahead so I don’t think that I will bake anymore this week.  I found another dinner recipe that I want to cook, pork tenderloin and mash gratin from @jamieoliver, and I am wishing spring my way with this lemon sheet cake.  This cake would be a great addition to your Easter menu.  The grocerylList 7 23  is a long one!

Weekly meals Feb. 13 – Feb 17

Meal updates from last week:
I LOVED the broccoli salad as well as the chopped salad.  I will be making the broccoli one again very soon.  We also enjoyed the sticky tofu, as I have said before if you are looking for a cost effective protein then give tofu a try.  I have been attempting to make it once a week as an alternate to chicken or red meat, and my son has now started to ask for it.  My daughter is not a fan, but I serve her a hard boiled egg and some edamame.  This weekend we celebrated my birthday, we went out for dinner with friends Friday, went to friends for dinner Saturday (I made brownies for dessert) and then went out to Barbarella Sunday.  My husband got an early dinner reservation Sunday and we took the kids with us, the food was outstanding and we will be going back to try other menu items.  We ordered: crispy artichokes, calamari, Albacore crudo, linguine with clams, penne arrabbiata and lemon tart for dessert.  They have happy hour every day from 2-5 and all drinks including bottles of wine are %50 off!  There were so many other things on the menu that we wanted to try, but that just means that we will have to go back!

This week we will be eating at home Monday-Thursday, and will be skiing this weekend.  Kids are still busy with activities and school.  This week’s menu is very simple, lots of grilled protein paired with salads.

I don’t have baking plans this week, and I have yet to make the lemon loaf.  If I have time then I will make some banana muffins to take skiing.  As this week’s menu is simple and short their isn’t a grocery list.

Weekly meals Nov. 28 – Dec. 2

Meal updates from last week:
My favourite meal from last week was the chicken, broccoli and potato sheet pan, and as always we LOVED the Thai chicken, broccoli and noodles.  If you haven’t ever made the recipe then this is me telling you, it is a must make!  Thursday night we had breakfast for supper, Friday we ordered sushi and Saturday we had lasagne and caesar salad.  With the drastic change in weather I decided to make a large pot of hamburger soup this afternoon, I decided to add more veggies and bought some frozen corn and green beans.  It turned out great!

This week we will be eating at home Sunday-Thursday I am going out Friday night and then we have our first holiday party Saturday.

Last week I made a batch of mint chocolate chip cookies, and some baked ziti with sausage for loved ones.  This week I am hoping to make some gingersnap cookies, I immediately put all of my holiday baking into the freezer so that it doesn’t get eaten.  Then when we are invited to friends, or host, I pull them out so they can come to room temperature before serving.  I really like to have a variety of cookies, it is nice to gift people with different kinds.  Take grocery list 34 22 with you when you shop.

Weekly meals Oct. 24 – Oct. 28

Meal updates from last week:
The parmesan salmon is such a simple and delicious recipe!  It is a must make.  We also enjoyed the chicken tacos, I made a simple kale slaw to go on top of mine.  I didn’t have a chance to make the creamy chicken soup, so I have moved it to this week’s menu.  This weekend we ate in both Friday and Saturday, we ended up doing DIY pizza with friends and then cooked some meatballs from Lina’s and served them over pasta last night.

This week we will be eating at home Sunday-Thursday, it is another busy week and jammed packed weekend before Halloween.  I am really trying to keep my activity night meals super simple.

Last week I made some pumpkin muffins using my favourite recipe, and this weekend I made some monster cookies using GF flour and oats.  They are delicious!  This week my son has asked for some carrot muffins, so I think that I will try these.  Shop with ease using  Grocery List 31 22
