Meal updates from last week:
We enjoyed all meals from last week, I especially liked the salmon bowls and the corn chowder. The salmon cubed and cooked for a very short time was tender and delicious The pork Milanese was also really good. This weekend we went to visit friends in southern Alberta, Thursday we had pulled pork with coleslaw and Friday night we ate satay pork tenderloin with southwest salad. We didn’t have any quinoa, so instead we used some chopped romaine. We also got the chance to go strawberry and raspberry picking, it was such fun! Saturday night we ate out as a family and then Sunday we were at friends for burgers and corn. It was a busy fun filled weekend, the perfect way to end summer!
This week I am back at work and the kids start school on Thursday. It is back to regular weeknight dinners and making school lunches. We are eating at home Monday-Thursday, we are home for the long weekend and don’t have many plans.
- BBQ’d chicken drumsticks, tots and honey mustard broccoli crunch salad from @nourishedbynic, I made this meal tonight and the broccoli salad was amazing. This is a no mayonnaise salad, I was a little skeptical but it turned out so well. It is a great salad to make on a Sunday and have all week for lunches.
- Asian grilled flank steak from @foxandbriar, roasted potato wedges and house salad.
- Sheet pan chicken thighs with spicy corn from @nytcooking, I will link this recipe, but most of the time you require a subscription to view.
- Thai noodles with chicken and broccoli, this recipe was originally from Anne Lindsay, I usually don’t add the chicken, instead I use more veggies.
Here are some other recipes I have been eyeing: cowboy cookies, raspberry cream cheese coffee cake, corn bacon and arugula pasta salad, cinnamon crunch banana bread and crispy lemon potatoes with dill whipped ricotta. Grocery list will be back next week.
